Description

A totally different approach to the age old standby, the Omelete

Ingredients

  • 6 sli white bread
  • 3 sli bacon rashers
  • 6 eggs
  • 1 c cheese, cheddar or tasty
  • salt
  • ground pepper
  • oregano
  • parsley

Instructions

Preheat Oven to 180 Celsius *fan forced oven

Get a Muffin pan (12) and grease. (Line with paper if desired)

Remove crust from bread and place bread into muffin pans so the base and sides are covered.

Chop up bacon and cheese. Beat whites of egg and add yolks and beat further, adding bacon and cheese and salt, pepper, Oregano and parsley whilst mixing.

Fill inside of bread with mixture and bake in oven for 12-16 mins until bread is crisp and brown and mixture is cooked through. Remove from muffin pan, Garnish with parsley and grated cheese and serve

Notes

Serve a minimum of two Muffin Omeletes per person. Adjust quantity of Bread etc to the size of the Muffin pans

Add salt, Pepper, Oregano and Parsley to your own preference
