Description

Omelette with filling, full of flavour and fluffy

Ingredients

  • 2 eggs
  • salt to taste
  • ground pepper to taste
  • 1⁄2 stick celery
  • 1⁄2 rasher bacon
  • 1 slice cheese, chopped
  • parsley
  • t butter
  • thick slice tomato, chopped

Instructions

Separate the yolk from the white, and beat the white til fluffy.  Fold in the yolks, salt pepper and parsley and gently beat a little longer.  place the bacon on a strip Paper towel and cook in a microwave (approx 1 1/2 minutes depending on the power of your microwave)  Chop the bacon into small pieces and slice the celery.

Turn the heat to medium, place the pan over the heat and let it get quite hot (about half a minute). Now add the butter and as soon as it melts, swiftly swirl it round, tilting the pan so that the base and the sides get coated. Now turn the heat up to its highest setting. When the butter is foaming, pour the eggs into the pan, tilting it to and fro to spread the eggs evenly over the base. Then leave it on the heat without moving it for a count of five.

Spread most of the bacon pieces, cheese and celery across the top of the eggs.  The omelette will start to set and after about 10-15 seconds it should be ready to fold in half.  Turn down the heat and cook for a short while longer turninhg if necessary.  Serve on a plate with some fresh parsley, cheese and warm tomato sprinkled over the top. 

Notes

Have everything ready before you begin.  Use a whisk or a fork to beat and don't be too vigorous.

One omelette will serve one person and, because it is so quick to make, it's not worth cooking a large one for two

Remember, an omelette will go on cooking, even on the plate, so serve it immediately
