Spiced lamb fillets with broccolini

Description

Not being a Bed & Breakfast host, I would never dare to put a breakfast recipe here, but this is a dinner recipe I've been making lately. It's quick and easy and it's gooood!

Ingredients

  • 2 clv garlic
  • 2 tbsp olive oil
  • 800 g lamb fillets
  • 2 onions, sliced
  • 2 T tomato paste
  • 1⁄2 c red wine
  • 1 1⁄2 T sultanas
  • 1⁄2 small green chilli, chopped
  • 1 T shredded mint
  • 1⁄2 tsp paprika
  • 1 T pine nuts
  • 1 lemon (zest only)
  • 2 bn broccolini

Instructions

Place garlic & oil in a bowl. Add lamb and toss to coat thoroughly.
Heat a large frying pan over high heat. Brown lamb, in small batches, for 1-2 minutes, then remove from pan and set aside. Add onion to pan and cook for 5 minutes, or until soft. Stir through tomato paste, wine, sultanas, chilli, mint, paprika, pine nuts and lemon zest and cook for 2-3 minutes. Return meat to pan to heat through.
Meanwhile, bring a small saucepan of lightly salted water to a boil. Blanch broccolini for 2-3 minutes, then drain.
Top lamb with onion mixture and serve broccolini alongside.
