Chocolate Self Saucing Puddings

Description

Incredibly rich and delicious self-saucing puddings that take only minutes to prepare, can be left for hours and then cook in 10 mins. Must be served immediately though or they continue to cook and you lose the "self saucing" part.

Ingredients

  • 125 g butter
  • 125 g good quality plain chocolate
  • 1 T brandy or cointreau (should be a dessertspn but none on list)
  • 3 eggs
  • 3 T plain flour
  • 3⁄4 c caster sugar
  • cream, creme fraiche, fresh raspberry coulis to serve

Instructions

  1. Microwave butter and chocolate on medium for 2 minutes.
  2. Meanwhile mix eggs, sugar and plain flour
  3. Add to hot chocolate mix and whisk until well combined.
  4. Pour mix into 4 buttered ramekins - leave until 10 minutes before ready to serve.
  5. Place in HOT (220C) oven for 12 mins, serve immediately with whipped cream, yoghurt or crème fraiche and fresh raspberry coulis.

Notes

If you're feeling brave you can turn them out of the ramekins, but I generally leave them in and warn people not to touch.

I then put the creme fraiche on top, pour over the raspberry coulis and give instructions to plunge spoon thru both into the hot centre so it all mixes together in a decadent mess.
