Poached Pears and Strawberries as prepared by Lindey Milan at the 2007 BBF NSW-ACT Conference
Ingredients
- 80 ml honey (1/3 cup)
- 250 ml white wine
- 1 star anise
- 1 cinnamon stick
- 4 pears - firm
- 1 punnet strawberries - hulled
- 1 thin strip lemon rind
- yoghurt to serve
Instructions
Combine honey, wine, lemon rind, star anise and cinnamon in a medium saucepan.
Peel pears, leaving stems intact. Add pears to saucepan. Add sufficient water to cover. Stir gently to mix. Bring to the boil; cover and simmer gently for about 30 minutes or until tender, turning pears occasionally.
Cut strawberries in half if large and add to pears for last couple of minutes of poaching.
Transfer pears, strawberries and syrup to a large non-metallic bowl; refrigerate for several hours or overnight.
Remove the pears from the syrup and strain the syrup through a fine sieve.
Notes
Serve pears with poaching liquid and yoghurt, if desired.
