I did not find this site very useful for statistics on Bed & Breakfasts or Farmstays specifically, as these are grouped with Accommodation, Cafes and Restaurants, if they are even included at all.
Those writing or reviewing their business plans may find some interesting statistics - for example: the increase in the number of people aged 55 to 64. In ACT this figure increased from 9.1% of the population in 2002 to 10.4% in 2006. In NSW, 9.8% of the population were aged between 55 and 64 in 2002, increasing to 10.9% in 2006.
